Zucchini Brownies

A Taste of Harvest Time

when was the last time you had a Zucchini Brownie? Was it when your mother made them? Now why not make some for your family and continue the tradition, we all love chocolate so in this recipe I use cocoa powder instead to get the rich chocolate taste but not the calories, with the Zucchini these brownies moist and delicious.Zucchini is a great source of potassium, phosphorus and vitamin C, so by adding this to our brownies it is now a healthy snack or dessert.

When baking your brownies you can use either a square or round pan, it depends on how you want to serve them. I use a square pan when I want to use them for lunches, but I like to bake them in a round pan for dessert, then I can cut them in wedges and serve with ice cream or fruit.If you would like to be more formal then try this, it will impress all your guests.I use a white plate, now make about three lines across the plate with chocolate or raspberry sauce, place the wedge of brownie on top of lines in the center of the plate, now place a large scoop of ice cream on top or beside the wedge, drizzle some of the syrup over ice cream and if you like whipping cream put some on the ice cream and top off with a cherry. The zucchini brownie is so versatile you can let your imagination go wild and come up with a lot of different toppings.


  • 2 cups flour
  • 1 ½ cup sugar
  • 1 tsp salt
  • ½ cup cocoa
  • 1 ½ tsp soda
  • 2 eggs
  • ½ cup chopped nuts
  • 2 tsp vanilla
  • 2 cups Zucchini (peeled, seeded and grated)
  • ½ cup vegetable oil

    Sift dry ingredients and combine with rest of ingredients. Spread dough in greased 9x13-inch pan and bake 30 minutes in 350-degree oven.

    You do not need to frost these brownies, but if you would like to here is a quick frosting.


  • ¼ cup margarine or butter
  • 2 tbsp cocoa
  • 6 tbsp milk
  • 2 cups icing sugar

    In sauce pan, heat margarine, cocoa and milk until well blended.Remove from the heat and add icing sugar.Beat well and pour over brownie when still warm.

    Quick frosting After brownie is baked just pour enough small marshmallows to cover the top and place under broiler for 2 minutes, watch at all times, just when it start to brown take out.

    If you like dried fruits or nuts just add ½ cup to dough or glazed fruits like pineapple or cherries they can be added too.


  • 1 cup margarine
  • 1 cup cocoa
  • 2 cups sugar
  • 4 eggs
  • 2 tsp vanilla
  • 1 1/3 cups flour
  • 1 tsp baking powder
  • 1 cup nuts (optional)

    Melt margarine, remove from heat stir in cocoa mix well, add sugar, eggs and vanilla. Add dry ingredients: flour, baking powder and nuts.If you prefer a more chewy brownie then just add 3 eggs if not the recipe with 4 eggs are more cake like texture. You do not have to frost these brownies they are great with out it, but here is a frosting if you would like to.



  • 3 tbsp melted margarine
  • ¼ cup cocoa
  • ¼ cup milk
  • 1 tsp vanilla

    Mix all ingredients and add 2 cups Icing sugar.
