Turkey And Broccoli Bake

This is a great way to use up leftover turkey or cook three large chicken breast and just add them to your recipe. If there is no Ritz cracker in the house then you can use two cups of cubed fresh bread or croutons from the store.


  • 5 cups frozen broccoli thawed

  • 2 cup frozen whole kernel corn thawed

  • 6 cups turkey cooked and diced

  • 2 can fat-free cream of chicken soup

  • 2 cup cream style corn

  • 1 cup onion, chopped

  • 2 tsp dried parsley

  • ½ tsp pepper

  • 20 Ritz reduced fat crackers made into crumbs

  • ½ cup light cheddar cheese, shredded

  • 1 cup mushrooms (small-can)


    Spray an 9 by 13 pan with cooking spray.

    Combine broccoli, whole kernel corn and turkey. Mix soup, cream style corn, onion, parsley, pepper and salt,mix well.

    Spread in pan. Top with cheese and cracker crumbs. Bake at 350 F for 35 to 40 minutes until top turns brown.Serving 8
