Hash Brown and Ham

Hash brown and Ham is a great combination, the potatoes are crisp

and the ham add so much flavour.If you would like to prepare

the potatoes from scratch, cook 12 large potatoes whole, do not

over cook them, cool then shred or chop, toss with 1/2 cup

chopped onions, 1 tsp salt and pepper. Heat 6 tbsp margarine in

skillet. Pack potatoes firmly in skillet, leaving 1/2 inch space

around edges. Cook over low heat 10-15 minutes or until bottom

has brown crust.

Cut into four sections and carefully turn (only once) add 2 tbsp

vegetable oil and cook another 10-15 minutes.


  • 6 cups frozen hash brown

  • 1/2 cup chopped onions

  • 3 cups diced ham

  • 1 1/2 cups cheddar cheese ( divided)

  • 8 Eggs

  • 3 cups milk

    Remove as much a possible of the moisture from the hash browns, by using paper towels. set aside.

    In a skillet cook the onions until transparent, then add hash browns and cook until brown, stir in ham, heat through, add one cup of cheese, remove from heat, pour in casserole ( 9x13) pan.

    In a bowl, beat eggs and milk pour over ham mixture, sprinkle with remaining cheese.

    Bake uncovered for 30 minutes at 350 degrees.
