Ginger Nut Bread

For lovers of ginger, this ginger nut bread is for you. If you would like you can increase the amount of candied ginger to three tablespoon, with the applesauce and molasses the loaf is very moist.

If you are having a breakfast party, add some other breads to your menu like coconut banana pecan bread , and applesauce nut bread, you can bake all of them weeks before and freeze, then just place in the oven at 300 degrees for 20 minutes and they will taste like you just baked them.


  • 1 cup applesauce
  • 1/4 cup molasses
  • 1/4 corn syrup
  • 1 tsp baking soda

    Bring applesauce to boil over medium heat. Remove from, stir in molasses, corn syrup and baking soda. Mixture will bubble. Let cool slightly.

    Mix together:

  • 1 ½ cups all purpose flour
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/4 tsp pepper ( yes pepper)

  • 2 Eggs
  • 2/3 cup packed brown sugar
  • 1/3 cup vegetable oil
  • 1 cup chopped nuts ( if using walnuts toast them)
  • 2 tab chopped candied ginger

    Beat eggs with brown sugar until fluffy. Beat in oil. Stir in flour mixture, alternating with applesauce mixture, fold in nuts and candied ginger. Pour into pan. Bake for 45 minutes.
