Coconut Banana Pecan Bread



Add a little Island taste to your next bread with this coconut banana pecan bread easy to make and taste delicious, can be used for breakfast, or a healthy snack. Need a dessert then slice a piece, put on your plate and add a scoop of ice cream, sprinkle top with coconut and chocolate sauce, enjoy.

Ingredients:

  • 1/4 cup shortening
  • 2/3 cup sugar
  • ½ tsp salt
  • 2 eggs
  • 1 cup mashed ripe bananas
  • 1 3/4 cups flour
  • 2 tbsp baking powder
  • ½ cup flaked coconut
  • 1 cup broken pecans
  • ½ tsp soda

    Preparation:

    Cream shortening and sugar, add eggs. 1 at a time. Beat well, add mashed bananas and soda mix. Add flour and baking powder. Stir until smooth. Add coconut and nuts. Bake in well greased 8x4x21/2 loaf pan in a 350 degree oven for 40 minutes.
