Carrot Salad

This carrot salad is fast to prepare and taste great, it has a secret ingredient (tomato soup).

This is one of the best salads, you can prepare it a day before your party and it will keep well as it marinades it will taste even better.


  • 2 pounds carrots, pared and thinly sliced,
  • 1 medium-size red onion, thinly sliced,
  • ½ cup chopped sweet green pepper.


  • 1 can (10-3/4 ounces) tomato soup,
  • 3/4 cup sugar,
  • ½ cup vegetable oil,
  • ½ cup vinegar,
  • 1 teaspoon worcestershire sauce ( optional),
  • ½ teaspoon salt

    Cook carrots in salted cold water to cover in a large saucepan, until crisp-tender. About 20 minutes. Drain: cool.Combine soup, sugar, oil, vinegar, worcestershire sauce, if using, and salt in a small saucepan. Bring to boil, pour over all vegetables, stir gently to combine. Cool, cover and refrigerate at least 24 hours to blend flavors.
