Turkey Pilaf

This turkey pilaf is rich and delicious with the flavours of apricots and currants.

Pilaf is originally from the Middle East, it is a grain dish in which the grain usually rice... is first heated in a pan, either dry or in fat, and then combined with a hot liquid and cooked, covered over direct heat or in a oven.

Pilaf can be a simple dish, or can be composed of only grain and the cooking liquid or you can add any meat or vegetables you like.

Ingredients:

  • 2 Tbsp (30 ml) butter
  • 6 Green Onions, sliced
  • 4 Celery stalks, chopped
  • 6 Cups cooked turkey, chopped
  • 1 Cup (250 ml) dried apricots, chopped
  • 1 Tsp (2 ml) ginger
  • 4 Cups (1 litre) chicken or turkey broth
  • 4 Cups (1000 ml) instant rice
  • 1 Cup (250 ml) currants
  • ½ Cup (125 ml) fresh parsley, chopped

    Preparation:

    In large skillet, melt butter and saute onions and celery.Add cooked turkey, dried apricots, ginger and broth. Bring to a boil.Stir in rice and currents. Remove from heat, cover and let stand 5 minutes.Toss with parsley.
