Turkey Nectarine Salad

Do you have some leftover turkey or chicken? this turkey nectarine salad is for you, it is served warm and if there is no more leftover turkey or chicken then just cook 4 boneless breastsin half a cup of chicken broth, for 10 minutes. Now cool and add to the salad with nectarine or peaches, the herbes de provence is a tasty spice, now enjoy.

  • 6 tbsp (45 ml) olive oil

  • 1 tbsp (7 ml) herbes de Provence

  • 1/2 tsp salt
  • pinch pepper

  • 4 cups(500 ml) turkey cooked

  • 16 cups torn mixed salad greens

  • 8 Nectarines or Peaches

  • 2 Sweet onion, cut in wedges

  • 2 sweet red pepper, thinly sliced

  • 2 clove garlic, minced

  • 4 tbsp (30 ml) red wine vinegar

    In large skillet, heat olive oil, add onion, red pepper, garlic and chicken, cook for 8 minutes, stir in vinegar, add to greens along with nectarines, toss to combine and serve immediately.


    Herbes de Provence is a blend of dried herbs.

  • 1 tbsp dried rosemary

  • 1 tbsp oregano

  • 1 tbsp thyme

  • 1 tbsp marjoran

  • 1 tbsp basil

  • 1 tbsp fennel or anise

  • 1 tbsp tarragon

    Add optional lavender leaves to taste.
