Leftover Turkey Favourites
If you are lucky enough to have some leftover turkey, then here is some suggestions for them. Turkey is first on my shopping list, the larger the better, for at my house there is no leftovers, when my children come home for dinner, they bring their containers with them to take it all home. Turkey freezes well, but I always pour gravy over it before freezing. A new dish everyday from your leftover turkey or freeze and eat later Turkey & Gravy =Hot Turkey Sandwiches Turkey, Vegetables, Stuffing and gravy, add them in that order and top off with Cranberry Sauce, this will make a tasty meal.You could make a lovely turkey pilaf. Don’t forget the bones to make your soup.
Wraps.................just add, flour tortilla, lettuce, mayo, cranberry sauce and turkey. Stir Fry ............. Turkey, Snow Peas and Cashew 3 tbsp (45 ml) soy sauce 1 tbsp (15 ml) cornstarch 1 tbsp (15 ml) granulated sugar 1 tbsp turkey or chicken stock 2 tbsp (30 ml) veg. oil 1 cup snow peas 1 sweet red pepper 1/2 cup roasted cashews 1 clove garlic 2-inch (5 cm) piece ginger root sliced 4 cups cooked turkeyPreparation In small bowl, whisk together soy sauce, cornstarch and sugar.Remove strings from snow peas, cut diagonally in half, cut red pepper into bit-size chunks. set aside.In skillet heat vegetable oil, add snow peas, red pepper cashews, garlic and ginger. cover and steam until red pepper is tender-crisp, about 2 minutes. Add turkey and toss to combine. stir in soy sauce mixture until glossy about 1 minute. Makes 4 servings (can be doubled)
Turkey Salads This is an excellent way to use up your leftover turkey and it will be a new and healthy dish. Mandarin Turkey Salad 1 tbsp (15 ml) water 1 tbsp (15 ml) lemon juice 2 large firm bananas 4 cups (1 L) bite-size mixed salad greens 2 cups (500 ml) cooked turkey cut into bite sized pieces 11-oz (325 ml) can mandarin orange sections, chilled and well drained.8-oz (227 ml) can pineapple chunks, well drained1 cup (250 ml) seedless red grapes or pitted dark sweet cherries1/2 cup coarsely chopped pecans, toasted1 Bottle of Kraft Poppy-Seed salad dressingCombine the water and lemon juice in small bowl, add sliced bananas and toss to coat. Place the salad greens, turkey, orange sections, pineapple and grapes in a large bowl. Drain the bananas and add to the salad,pour salad dressing over and toss, sprinkle with the pecans. Makes 4 servings
Turkey Pie 3 cups leftover turkey3 cups vegetables, can be leftover or frozen1 10 oz can cream of chicken soup or broth 1 cup bisquick mix1 eggHeat oven to 350 degrees. mix vegetables, turkey and soup together, place in 9 inch baking pan.Stir bisquick mix, milk and egg until blended.pour over turkey mixture.bake 30-40 minutes.makes 6 servings.can be doubled for 12.
