Ham-n-a-Cup

Ham-n-a-Cup is the perfect way to serve your eggs and ham, you will impress your guests and will save yourself a lot of time,because you can prepare the egg mixture the night before and refrigerate it, ready to go in the morning. If there are kids in your home have them put all the ham in the cups they will like that.

This lovely dish can be served with orange wedges, fruit salad,toast, tea, coffee or milk, and if your guests are big eaters why not add some potato pancakes. to the menu.



Ingredients:

  • 12 slices of cooked ham (round in shape)

  • 2 green onions finely chopped

  • 1 1/2 cup shredded cheddar cheese (divided)

  • 24 (2 doz) Eggs

  • 1 1/2 cups plain yogurt or sour cream

  • 1/2 cup finely chopped parsley

    Spray two large muffins tins with vegetable spray. Place ham slice in each muffin cup, sprinkle with green onions and 1 tbsp each with shredded cheese in bowl, beat eggs, yogurt or sour cream and pepper until blended, pour into muffin cups and remaining cheese.

    Turn on your oven broiler, now place muffin tins in the middle of the oven and broil for about 5 minutes or until brown, watch these or they will burn very quickly.

    When baked sprinkle with parsley and serve.

    Servings: 12
