Carrot Salad
This carrot salad is fast to prepare and taste great, it has a secret ingredient (tomato soup). This is one of the best salads, you can prepare it a day before your party and it will keep well as it marinades it will taste even better. Ingredients: 2 pounds carrots, pared and thinly sliced, 1 medium-size red onion, thinly sliced, ½ cup chopped sweet green pepper.Dressing 1 can (10-3/4 ounces) tomato soup,3/4 cup sugar, ½ cup vegetable oil, ½ cup vinegar,1 teaspoon worcestershire sauce ( optional), ½ teaspoon salt Cook carrots in salted cold water to cover in a large saucepan, until crisp-tender. About 20 minutes. Drain: cool.Combine soup, sugar, oil, vinegar, worcestershire sauce, if using, and salt in a small saucepan. Bring to boil, pour over all vegetables, stir gently to combine. Cool, cover and refrigerate at least 24 hours to blend flavors. Makes 12 servings 24 servings.....5 pounds of carrots
