Christmas Pudding....

Warm and Delicious

Christmas Pudding is a favourite of my family, it is very rich with the caramel sauce. This is one Christmas chore you can strike off your list, for you can make it up to a month before and freeze, just steam as usual and cool then wrap in two layers of foil and freeze.Some of the ingredients will surprise you, there is grated carrots, potatoes and apples, which make it so moist and delicious.

Ingredients:

  • 2 cups grated carrots,
  • 2 cups grated potatoes,
  • 4 cups dried fruit (2 each of raisins and currants or fruit),
  • 2 cups brown sugar,
  • 2 cup butter,
  • 2 cups chopped apples,
  • 2 tbsp molasses,
  • 1 tbsp lemon juice,
  • 1 cup flour,
  • 2 tsp salt,
  • 1 tsp baking soda,
  • 2 tsp cinnamon,
  • 1 tsp allspice.

    Mix all dry ingredients together. Add moist ingredients. Press firmly into container.Tie waxed paper over top. Steam pudding 4-5 hours. Store in cool place.



    Caramel Sauce

  • 1 cup brown sugar,
  • 3 tbsp butter,
  • 2 cups hot water,
  • 3 tbsp cornstarch,
  • ½ cup cold water,
  • 1 tsp vanilla.

    On low heat cook together brown sugar and butter, stirring until the sugar is dissolved and turn a rich golden brown. Don’t let it get too dark. The butter and sugar just start bubble at the edges of the pot. Slowly stir in hot water. Dissolve cornstarch in cold water,and add slowly to the syrup mixture. Cook until it thickens. Add vanilla. Serve warm over pudding.


    Tip: You can use a vegetable steamer for your pudding it does a great job.
